For the Chocolate Sponge Cake:
4 large eggs
¾ cup granulated sugar
1 tsp vanilla extract
½ cup all-purpose flour
¼ cup cocoa powder
½ tsp baking powder
Pinch of salt

For the Filling:
1 ½ cups heavy whipping cream
¼ cup powdered sugar
1 tsp vanilla extract

For the Ganache:
1 cup dark chocolate, chopped
½ cup heavy cream

For Garnish:
Whipped cream swirls
Fresh cherries
Grated chocolate

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper, allowing some overhang for easy removal.
Make the Chocolate Sponge Cake: In a large mixing bowl, beat the eggs and granulated sugar together until thick and pale. Stir in the vanilla extract.
Combine Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.
Bake the Cake: Pour the batter into the prepared pan, spreading it evenly. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
Roll the Cake: Once baked, remove the cake from the oven and immediately invert it onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper and roll the cake tightly in the towel, starting from one short end. Allow it to cool completely.
Prepare the Filling: In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Unroll and Fill: Carefully unroll the cooled cake. Spread the whipped cream filling evenly over the surface, then sprinkle with fresh cherries.
Roll the Cake Again: Roll the cake back up tightly, this time without the towel. Place seam-side down on a serving platter.
Make the Ganache: In a small saucepan, heat the heavy cream until just simmering. Pour it over the chopped dark chocolate in a bowl and let it sit for a minute. Stir until smooth and glossy.
Drizzle Ganache: Pour the ganache over the rolled cake, allowing it to drip down the sides.
Garnish and Serve: Decorate with whipped cream swirls, fresh cherries, and grated chocolate. Slice and serve chilled for a delicious treat!
