1 lb large shrimp, peeled and deveined
1 bunch asparagus, trimmed and cut into 2-inch pieces
1 tbsp olive oil
1 tbsp butter
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried thyme
1/2 tsp cayenne pepper (adjust to taste)
1/2 tsp black pepper
1/2 tsp salt
Juice of 1/2 lemon
Optional garnish: chopped fresh parsley, lemon wedges
Instructions:
1. Prepare the seasoning:
In a small bowl, mix paprika, garlic powder, onion powder, thyme, cayenne, black pepper, and salt.
2. Season the shrimp:
Toss shrimp in half the spice mixture to coat evenly.
3. Cook the asparagus:
Heat olive oil in a large skillet over medium-high heat.
Add asparagus and cook for about 4–5 minutes, stirring occasionally, until tender-crisp. Remove from skillet and set aside.
4. Cook the shrimp:
Add butter to the skillet.
Add the seasoned shrimp in a single layer. Cook for about 2 minutes on each side, or until shrimp are pink and opaque.
Sprinkle remaining seasoning over shrimp while cooking, if desired.
5. Combine and finish:
Return asparagus to the skillet with the shrimp.
Squeeze fresh lemon juice over everything and toss to combine.
6. Serve:
Garnish with parsley and extra lemon wedges. Serve hot as-is or over rice, cauliflower rice, or pasta.
