4 thin-cut sirloin steaks (about 1/4 inch thick)
1 cup shredded mozzarella cheese
1/2 cup crumbled blue cheese (optional)
1/4 cup fresh spinach, chopped
1 small red bell pepper, julienned
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp black pepper
Salt, to taste
2 tbsp olive oil (for searing)
For the Creamy Dijon Sauce:
1/2 cup beef broth
1/4 cup heavy cream
1 tbsp Dijon mustard
1/4 cup grated Parmesan cheese
1 tbsp butter
Instructions:
1. Prepare the Steak Rolls:
Lay the steaks flat and season both sides with garlic powder, smoked paprika, salt, and pepper.
Layer mozzarella, blue cheese (if using), spinach, and red bell pepper on one end of each steak.
Roll up tightly and secure with toothpicks or twine.
2. Sear the Rolls:
In a hot skillet with olive oil, sear each roll for 2–3 minutes per side until browned. Remove and set aside.
3. Make the Sauce:
In the same skillet, deglaze with beef broth. Stir in Dijon mustard, cream, and Parmesan.
Simmer until thickened, then whisk in butter for a smooth finish.
4. Combine and Finish:
Return steak rolls to the skillet. Spoon sauce over them.
Cover and simmer on low for 5–7 minutes until cheese is melted and steak is cooked to your liking.
